Tumbler ReUse: Creative Cooking

We put together a quick and easy guide with steps you can follow to re-use any candle glass, and now we're sharing some fun things to do with your new collection of tumblers.


This month I made a delicious accompanying sauce to some Korean veggie pancakes in my clean Keap tumbler. I find the glasses are the perfect size to mix and serve all kinds of dipping sauces and dressings. I've also noticed a change in how our community is relating to cooking during this quarantine: more comfort food and more leftovers!

 



Especially now as I limit my trips to the grocery store, I try and make sure I use all the food in my home before I plan my next shopping trip. Peering into my fridge, I realized I had a lot of random leftover raw veggies. I had 2 leeks, ¼ of a red onion, a handful of ramp bottoms, and two carrots. Veggie pancakes are a delicious way to clear out those leftover bits, because they are quick and require few other ingredients. Feel free to use vegetables that you have on hand!

Korean Vegetable Pancakes with Soy Dipping Sauce
Ingredients:
(Makes 2-10 inch pancakes. Recipe courtesy of @jshinster)

  • ~ 1 lb Pantry vegetables/leftover veggies (I used leeks, carrots, ramp bottoms, onion, garlic)
  • All veggies should be thinly sliced
  • Salt, pepper
  • Red chili flakes
  • ½ cup flour
  • ¾ cup water


Dipping sauce:

  • 1 tbsp toasted sesame oil
  • 3 tbsp soy sauce
  • Red chili flakes (to taste)
  • ½ tsp Sesame seeds
  • Ground black pepper (to taste)

 

Toss veggies with seasoning, flour and water in a large mixing bowl. Batter will have a thick consistency, with just enough flour and water to hold the mixture together. Pour ½ the batter into a heated pain coated in olive oil. Cook over medium heat until golden brown, about 3-5 minutes, flip and cook the other side for another 3-5 minutes. Repeat with remaining batter. 

For the dipping sauce, combine all ingredients into your clean Keap tumbler. Taste for seasonings. Serve your crispy pancakes with a drizzle of dipping sauce. Enjoy!
